TITA TRILLO’S MAGICAL WINE PAIRING CALITERRA EVENING

AT THE TIVOLI,

 

 

Leading wine connoisseur Tita Trillo’s passion for wine is mirrored in her work and in her celebrations. Recently, Titania Wine Cellar, Inc. indulged a privileged few to an evening of opulent wine pairing with the launch of the Caliterra Reserva.  It was a cocktail and dinner feast held at the Tivoli, under the direction and supervision of the Mandarin Oriental, Manila team, with it’s General Manager Mark Bradford,  Director of Communications, Charisse Chuidian, F&B Director Chico Angeles and Executive Chef Remi Vercelli.

 

Guests marveled at the abundance of long stemmed yellow and red Columbian roses, which transformed the Tivoli into a magical garden. Earning raves was wine luminary Nicolas del Solar, who flew in from Chile for the occasion.  Tita recounted her unforgettable experiences in the central valley of the famous vineyard, where she met Robert Mondavi and Eduardo Chadwick and this partnership had envisioned the magnificent winery.

 

The dinner commenced with an Amuse-Bouche of Chilean ceviche that was paired off with a crisp Tributo Chardonnay 2010, a critically acclaimed double gold medal in the Catad’Or Wine Awards in June, 2011. This was followed by a pan seared tuna salad with haricots verts, diced potatoes and feta cheese in anchovy vinaigrette. The cream of Parsnip soup was paired perfectly with an Arboleda Chardonnay 2910. The succulent braised veal was served with Cenit 2007, a multi awarded full bodied wine. Just when you thought you couldn’t have another bite, we simply couldn’t refuse the cheese course of Blue Goat’s cheese and Queso Rustico, which were paired with Sena.  Sena 2007 is the highest rating ever given to a Chilean wine.  The grand finale was the dessert ‘happening’; Like an artist’s canvas, two chefs, with paint brushes in hand, swirled chocolates, colorful syrups and tossed sweet delicacies directly onto the table, creating an eclectic, edible artwork. It is this element of surprise that makes an event so enjoyable and memorable.
